アメリカで牛や魚から採取した細胞で作る「培養肉」をテーマにしたシンポジウムが開かれ、量産化の成功に欠かせない、より早く細胞を増やす技術の確立に向けて業界の連携が呼びかけられました。
培養肉は牛や魚から採取した細胞をたんぱく質やアミノ酸などの栄養分が入った特殊な液に浸し、培養して作るものです。
通常の牛肉などと比べて温室効果ガスの排出が少ないとされることから環境面でも注目が高まっていて、2030年には市場規模が1兆4000億円を超えるという予測もあります。
アメリカのサンフランシスコで22日から始まったシンポジウムには培養肉の開発に携わるスタートアップ企業や専門家などおよそ150人が参加しました。
この中で、培養肉を作る技術はここ数年で格段に進んだものの作るのに手間がかかるため量産化が課題になっていると報告されました。
そして、量産化に欠かせない、より早く安定的に細胞を増やすための技術の確立に向けて業界の連携が呼びかけられました。
また、普及には消費者の理解を得る必要があるとして、作り方や成分などの情報を開示していく必要性についても議論されました。
シンポジウムの共同主催者、アレックス・シラージさんは「培養肉の技術への理解を深めてもらい、投資を集めて業界を盛り上げたい」などと話していました。
